Simple.
And yet, I screwed this up.
I went overboard on the fresh basil & forgot to add onion. The result was just inedible. ![]()
What a waste…I hate wasting food!
The recipe is still a good one to try though. With no real dressing in it, it’s very light. Easy summer-time, side salad!
Here is the Recipe: (adapted from, food.com by Malriah)
Healthy Cucumber Tomato Salad
1 large cucumber, cubed
1 - 2 medium tomatoes, cubed
1/2 small red onion, chopped
fresh basil, chopped
garlic salt
pepper• Add cucumber, tomato and onion to a bowl or container with a cover.
• Add garlic salt, pepper and fresh basil to taste.
• Cover & shake.
• Refrigerate (at least 1 hour).
Devour!
I will try this again. Hopefully, with fresh, farmers market toms.
