This was a strange salad.
Spinach. Oranges. Dill and roasted kumara (sweet potatoes) in a somewhat spicy, mustardy dressing.
I needed something to go with grilled brats and didn’t want to make traditional potato salad. This recipe sounded interesting, so I went with it. Not to mention, my doctor put me on a FODMAP restrictive diet for a month (checking for more food sensitivities/intolerances…UGH), so my food options have been very, very sad as of late.
Not sure if I’d make this again. If I did, it would be with fresh dill instead of dried and, I wouldn’t have it with grilled sausages.
