Quick dinner idea!
For gluten free asparagus pesto pasta, cook gluten free penne pasta until just about done (I used Barilla brand).
Add fresh chopped asparagus to the same pot.
Cook the asparagus, maybe 3-5 mins. It should be tender yet still crisp.
Remember that pesto sauce from last week? Add few tablespoons of it, and a little fresh chopped parsley. Cooked chicken, if you like.
Toss everything together, and serve with a good cheesy garlic bread (For gluten free, I toasted BFree Soft White Rolls with a little melted butter, garlic, salt, pepper and mozzarella).
I didn’t really measure for this but, for two servings, I used maybe 15-20 thin stalks of asparagus. 1 1/4 – 1 1/2 cups of pasta. 1 chicken breast. 1/2 – 1 teaspoon fresh parsley.
