Kale Salad with Peaches
Kale salad greens (about 2.5 ounces)
1 large ripe peach
2 tablespoons olive oil (I highly recommend Colavita brand)
1 tablespoon balsamic vinegar
fresh black pepper
• Chop peach
• Whisk oil and vinegar together in a medium bowl
• Season to taste with salt and pepper
• Toss salad greens in dressing, then plate
• Add peaches on top
I like to sprinkle a little bit of salt on top of the peaches to really bring out the sweetness.
