From time to time I’ll make stuffed peppers for dinner but, I wanted to try something else.
Zucchini? Stuffed with pizza ingredients?
Here’s my Recipe:
Ingredients & Prep
2 medium zucchini’s (ends chopped off, halved length-wise, and flesh cored out; roughly chop flesh and save in a bowl on the side)
2 italian sausages (casing removed)
1 tablespoon extra virgin olive oil
1/4 cup diced onion
1/8 cup diced bell pepper
salt & pepper (about 1/8 teaspoon each)
Bertolli Basil and tomato sauce
1 (8 ounce) bag of mozzarella cheese
Bake for 10 minutes at 350, then remove from oven and add cheese on top (about 2 ounces per zucchini halve). Then, crank oven up to 400 and bake an additional 10-13 minutes, or until cheese is brown & bubbly.
The zucchini is tender, yet crisp. The sausage adds a nice flavorful spice. Ooey, gooey cheese on top. And, the sauce ties it all together. It’s pizza, without the crust!
