This might be the best salad I’ve tried all year, thus far.
All the ingredients come together in this fantastic melody of tangy, orange-y fresh, nutty, sweet, sharp cheese goodness. I only wish there was a way to get an equal ratio of all this in every bite. Anyone else eat salads, and look to get a bit of each ingredient under the fork prong? It’s kinda frustrating only getting 2 or 3, isn’t it? A well-rounded bite is a very necessary thing! Lol

Mandarin Orange & Spinach Salad
8 cups fresh baby spinach leaves
1/2 medium red onion (sliced and separated into rings)
1 (11 ounce) can mandarin oranges (drained)
1 1/2 cups sweetened dried cranberries
1 cup toasted chopped walnuts
1 cup crumbled gorgonzola cheese
1 cup balsamic vinaigrette salad dressing, or to taste
• Put servings of spinach on each plate.
• Top with red onion, mandarin oranges, cranberries, walnuts and gorgonzola cheese in that order.
• Drizzle dressing over each salad.
The original recipe calls for slice honey-roasted almonds (and feta cheese). I imagine the almonds add more sweet/nuttiness but, I don’t really care for them. I would love – and can’t wait – to try this with Trader Joe’s Candied Pecans. Mmh…
