I went back to the doctor and told him my findings.
After eliminating wheat, corn, eggs, and potatoes from my diet for two weeks, then binging on them (one food at a time, over the course of 4 weeks), I noticed that wheat (and, more so corn) were problematic for me by the second day of adding them back into my diet. A lot of gurgly-stomach noises, some cramping and trouble going to the bathroom.
My doctor asked if I were staying clear of those foods.
I told him I was not.
I was feeling much better (on all fronts), since beginning to exercise and drink more water. Plus, I wasn’t stuffing my face with foods containing wheat and corn over the course of a day. I went back to my regular diet.
I love fresh fruit with slices of gluten-free, lactose-free cheese. On occasion, I skip the crackers.
For the most part, I just watch what I eat. See how I feel. And, make adjustments along the way.
