I was craving steak tacos, and found this extremely flavorful marinade!
It uses a mix of spices that I already had in the kitchen cabinet.
Yay for convenience!
Here is the Recipe: (Adapted from Allrecipes, by Stanicks)
Marinade ingredients for a 1.4 pound flank steak.
1/6 cup white vinegar
1/4 cup soy sauce
2 cloves garlic (minced)
1 lime, juiced
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
Tenderized steak with meat mallet, then cut into thin strips, across the grain.
Add steak to marinade. Coat well. Cover & refrigerate for 50 mins.
Remove steak from refrigerator & bring to room temp (about 30 mins.).
Heat a bit of vegetable oil in a large skillet.
Once hot, add steak & all of the marinade that is in the bowl.
Cook over high heat, until all the liquid evaporates.
Drain off any fat/oil.
Serve on warm corn tortillas, with Pico de Gallo & cheese.
I was nervous about making these tacos, because it was my first time cooking with flank steak (and I read how notoriously tough the cut can be). I made sure to really take the mallet/meat tenderizer to the steak; that, coupled with cutting across the grain made the steak amazingly tender…Not to mention the tasty marinade! Next time, I’ll either omit the salt, or just use low sodium soy sauce, though. It was almost too salty.
The Pico de Gallo helped to balance it out though. I’ll share that recipe in an upcoming post…stay tuned!
